Technical sheet PDFTasting notes
Pale gold with luminous highlights, lively effervescence and a fine, persistent mousse. A fresh, chiselled nose with notes of mint and anise over a flinty minerality; with aeration, white fruit and citrus. A frank, dynamic attack, flavours of pear, crisp apple and fresh lemon, a taut mineral backbone and a long, saline finish. Serve at 13 °C; cellar for 2 to 4 years.
Aperitif, hummus with olive oil and lemon zest, sea bream tartare, roast stuffed guinea fowl with fennel purée, lemon meringue tart. Seafood, crustaceans, fish, white meats and poultry.
