- Winemaking and ageing
- As soon as they arrive at the winery, the grapes are treated with dry ice to protect them from the heat, preserve their aromas and prevent any oxidation. The very gentle pressing keeps only the finest parts of the berry. Before alcoholic fermentation, the must rests for 24 hours between 8 and 10 °C for static settling. The wine is then aged for two months on its fine lees, with regular bâtonnage.
The vineyard
- Soil
- Sandy-silty alluvial deposits from the Arno and claystone soils: deep, well-structured soils without coarse elements, very fertile and with a high water reserve. Artumes is said to be the name the Etruscans gave to this area, where wine was already being made.
