Tasting notes

Pale, bright straw colour. The refined nose blends citrus blossom, ripe pear and white peach, with subtle notes of toasted almond, vanilla and brioche from the oak ageing. The poised, elegant palate rests on a lively natural acidity that frames citrus and stone fruit. Ageing on the lees brings creamy texture and depth. Long, clean finish with a saline minerality.

Food pairings

A mild, fragrant coconut curry, fish poached in butter with lemon and herbs, or a citrus crème catalane.

Winemaking and ageing
Selected grapes, hand-harvested at dawn, destemmed, crushed and gently pressed at De Grendel, with a yield of only 650 litres per tonne. After two days of settling, the inoculated juice ferments in 225-litre French and Austrian oak barriques, 33% of them new. The wine is aged for 8 months on the lees with bâtonnage, once a week before malolactic fermentation and then once a month thereafter.
