Tasting notes

Pale lemon-yellow colour with a translucent core. The nose suggests passion fruit, lime zest and snow pea, carried by crisp acidity. On the lively, taut palate, passion fruit, lemon meringue and green fig add complexity through to a saline, mineral finish.

Food pairings

Its liveliness makes it an ideal companion to citrus salads, lemon chicken, veal escalope with lemon, mussels with tomato concassé, gazpacho or grilled sardines with coarse salt, served with a lime aïoli.

Winemaking and ageing
Grapes hand-harvested in batches over three weeks, according to analysis, phenolic ripeness and aromatic profile, with a yield of 630 litres per tonne. After 6 hours of skin contact, the juice is settled, racked and then fermented in tank at 14 °C for 22 days. Ageing for 80 days on the lees refines the flavour and volume, before protein and tartaric stabilisation, blending and bottling.

The vineyard

Soil
Well-drained blue shale, at 200 metres above sea level on the western slope of the Tygerberg, 7 km from the Atlantic
Vine training
Vertical shoot positioning (VSP)
