Tasting notes

Deep ruby colour. The nose offers ripe plum, blackberry and pepper. The palate reveals layers of black fruit, mocha and spice, framed by silky tannins and elegant oak. The wine shows weight and intensity, supported by firm tannins, through to a long, persistent finish.

Food pairings

Lamb chops grilled over the coals, pepper steak or smoked ribs on the barbecue. Also rich stews, roasted vegetables and aged cheeses.

Winemaking and ageing
Grapes hand-harvested in three lots. A two-week fermentation in closed conical tanks, by aerated pump-over, gives supple tannins, delicate spicy notes and deep colour. The second and third lots ferment separately with pneumatic punch-down four times a day, for more robust tannins and fine concentration. After blending and natural malolactic fermentation in stainless steel tanks, the wine is racked three times and then aged for 13 months in barriques: 10% new American oak, 10% new French oak and 80% second- and third-fill French oak.
