Technical sheet PDFTasting notes
Light ruby colour with a slightly brick-tinged rim. The nose abounds in cranberry, sour cherry, mushroom, wet leaves and damp earth. The medium-bodied palate delivers flavours of liquorice, perfume, spice and porcini. Concentrated and elegant, it can be cellared for up to 8 years.
Light and elegant enough to accompany sea bass or rainbow trout. In summer, served lightly chilled, with charcuterie, ham and cold meats.

- Winemaking and ageing
- Hand-harvested grapes, destemmed and crushed, then cold-soaked for 4 days. After inoculation, the fermenting must is pumped over three times a day using the aerated pump-over method. After a gentle basket pressing, the wine goes into new French oak barriques for malolactic fermentation, then is aged for 13 months in older barriques.
