- Winemaking and ageing
- Hand harvested from late September to early October. Destemming, then fermentation and maceration at controlled temperature. The new wine rests in tank until January, when the grapes dried for three months for the Amarone are vinified: it is then "repassed" over the Amarone pomace at the end of its fermentation, hence its name, gaining body and character. Long ageing in French oak barriques, then in bottle.
