Technical sheet PDFTasting notes
Intense ruby red colour with garnet highlights. A broad bouquet reminiscent of blackberry and cherry jam, melted chocolate and tobacco. Straight, dry and austere on the palate, carried by a light acid backbone, with great extract and generous alcohol. It can evolve for up to 50 years in bottle, with a peak 20 to 25 years after the vintage. Raboso, a black grape grown in eastern Veneto for some 3,000 years, takes its name from the dialect word "rabioso", angry, for a fruit that is still somewhat harsh.
Game (hare, pheasant or guinea fowl, stewed or with peverada sauce), grilled meats and aged cheeses. Serve between 16 and 18 °C.
