Tasting notes
Very deep ruby colour with garnet highlights. Intense aromas of ripe wild fruit and violet. Full palate, with clear notes of ripe cherry and blackberry. A dry wine that benefits from long ageing: it can evolve for up to 50 years in bottle and reaches its peak 20 to 25 years after the vintage.
Game, spit-roasted meats, aged cheeses, or on its own as a meditation wine. Serve between 16 and 18 °C.

- Winemaking and ageing
- Grapes are sorted at harvest in early September, then dried for several months using the appassimento method. Once the desired concentration is reached, they are destemmed and placed in 225-litre barriques to ferment and macerate using the integral vinification method. Separated from the skins, the wine continues its fermentation and ageing in barrique, then matures in bottle.
