Technical sheet PDFTasting notes
Deep yellow-green colour, lively and bright. The assertive nose offers pronounced notes of ripe yellow fruit, apricot, pineapple, pear and quince, lifted by a hint of bergamot. The palate is smooth and broad, the sugars take on a caramelised touch and delicate raisin notes add depth. Serve between 8 and 10 °C. Enjoy now; can age for 10 to 15 years and more.
As an apéritif, with foie gras, fine pastries, fruit tarts and yellow-fleshed exotic fruit such as pineapple and mango.

- Winemaking and ageing
- Harvest delayed to concentrate the sugars in the grapes. Hand-harvested with sorting in the vineyard, long pneumatic pressing, static settling. Very slow fermentation, controlled at 20 °C, continued until the balance between sugar and alcohol set by the estate's oenologist is reached. Filtered and bottled at the estate.
